Some portions of the book are simply missing, i.e., where the book indicates something follows a section in the book, it is missing. The title is misleading...it is more of a recipe book than a course in cooking.

What a gem this book has turned out to be. Often cooking, once one has selected the best ingredients, is about process, and this guide defines the rationale behind the various processes used in the culinary arts. And the delightful and loving foreword is a lesson in spousal appreciation. Go Stohrs!
